Many aspects of the daily functions of your kitchen affect your daily budget. Knowing your daily cost is the only sure way to stay within that budget. From purchasing to inventory, during this presentation you'll walk through some of the basic principles of daily cost control.


Speaker Bio:
Jessica Morrison is a Regional Food Operations Director for the Virginia Department of Corrections. She served as Food Operations Director throughout the opening of River North Correctional Center in 2013. During her role as Food Operations Director, River North Correctional was a pilot site for updated religious diet programs. She received the Director's Award for Innovation in 2014. Before joining the Department of Corrections, Ms. Morrison was a School Nutrition Program Manager.
Ms. Morrison routinely assists in food cost analysis and visiting prisons to assist with meeting food
cost goals.

Ms. Morrison earned an Associate's Degree at Wytheville Community College and a Bachelor's degree from Radford University and is a Certified Dietary Manager. She is also an Instructor and Proctor for ServSafe, and an Instructor and Proctor for Foundations for Culinary Arts and Restaurant Management.
